What is Jerk?

This is a method of cooking begun by the Arawak Indians and runaway slaves in the 1600's. They combined salt, pepper and spices to preserve fresh meats. Pork, the meat of the day, was then cooked over pimento wood coals, the wood of the All Spice Tree, to give it it's distinct flavor. Today we know this as grilling, or Bar-B-Queing which originally began in Jamaica. Other meat that is widely Jerk cooked is chicken, fish and beef.
